Ingredients

- Step 3: Prepare the street corn mixture. To the bowl with cooked corn, add mayonnaise, the juice of one lime, crumbled cotija cheese, chopped fresh cilantro, and the remaining 1 tsp chili powder. Stir well to combine all ingredients thoroughly. Taste and adjust seasonings as needed.
- Step 4: Assemble the bowls. Divide the cooked and sliced chicken among individual serving bowls. Spoon a generous amount of the street corn mixture alongside or over the chicken. Garnish with extra cilantro or a sprinkle of chili powder if desired. Serve immediately.
