- 1 ¾ cups granulated sugar, divided

Instructions
- Step 1: Preheat oven to 350°F (175°C). For the crust, combine graham cracker crumbs with ¼ cup granulated sugar and 6 tablespoons of melted butter. Press mixture firmly into the bottom of a 9-inch springform pan. For the cheesecake filling, beat softened cream cheese with 1 cup granulated sugar until smooth. Beat in eggs one at a time, then stir in 1 teaspoon ground cinnamon. Pour filling over the crust in the springform pan and bake for 30 minutes.
- Step 2: While the cheesecake bakes, prepare the apple filling. In a medium saucepan, melt 2 tablespoons of butter over medium heat. Add the sliced apples, ¼ cup granulated sugar, and ½ teaspoon ground cinnamon. Cook, stirring occasionally, until apples are tender but still hold their shape, about 8-10 minutes.
- Step 3: To make the crumble topping, in a medium bowl, combine all-purpose flour, remaining ¼ cup granulated sugar, and the remaining 10 tablespoons of cold butter (cut into small pieces). Use your fingertips or a pastry blender to mix until the butter is incorporated and the mixture resembles coarse crumbs.
- Step 4: After the cheesecake has baked for 30 minutes, remove it from the oven (it will still be jiggly in the center). Spoon the prepared apple filling evenly over the top of the cheesecake. Then, sprinkle the crumble topping generously over the apples.
- Step 5: Return the cheesecake to the oven and bake for an additional 25-35 minutes, or until the crumble topping is golden brown and the cheesecake edges are set. Remove from oven and let cool completely on a wire rack, then refrigerate for at least 4-6 hours, or preferably overnight, before releasing from the springform pan and serving.
