- 1 lb skinless salmon fillet
- 1 cup uncooked jasmine rice
- 1/2 cup mayonnaise
- 1/4 cup sweet chili sauce
- 1–2 tablespoons sriracha (adjust to taste)
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 2 green onions, chopped
Instructions
- Step 1: Cook the jasmine rice according to package directions. While the rice cooks, pat the salmon fillet dry and cut it into 1-inch cubes.
- Step 2: In a medium bowl, toss the salmon cubes with the 1 tablespoon soy sauce and 1 teaspoon sesame oil until evenly coated. Arrange the salmon in a single layer on a parchment-lined baking sheet or in an air fryer basket.
- Step 3: Bake the salmon at 400°F (200°C) for 10-12 minutes, or air fry at 375°F (190°C) for 8-10 minutes, until cooked through and slightly crispy.
- Step 4: While the salmon cooks, prepare the Bang Bang sauce. In a small bowl, combine the 1/2 cup mayonnaise, 1/4 cup sweet chili sauce, and 1-2 tablespoons sriracha. Stir well until smooth and thoroughly combined.
- Step 5: Once the rice and salmon are ready, divide the cooked rice evenly among two bowls. Top each bowl generously with the cooked Bang Bang Salmon Bites. Drizzle a generous amount of the prepared Bang Bang sauce over the salmon bites and garnish with chopped green onions. Serve immediately.
Notes
- For best leftovers, store any extra cooked salmon and rice in separate airtight containers in the refrigerator for up to 2-3 days, and keep the Bang Bang sauce separately as well.
- For optimal texture, gently reheat any leftover salmon bites in an air fryer or oven until just warm, avoiding the microwave to keep them from drying out; the rice can be microwaved with a splash of water.
- Elevate your bowl with a pop of freshness and crunch by adding some sliced avocado, shredded cucumber, or a sprinkle of toasted sesame seeds before drizzling the sauce.
- For a truly custom experience, taste your Bang Bang sauce before adding all the sriracha; you can easily adjust the spicy kick up or down to perfectly suit your palate.
