Description

Transform simple sweet potatoes into irresistible bites! Our Honey Cinnamon recipe roasts them to tender, spiced perfection. A truly sweet side with full instructions & nutrition info to guide you.

Ingredients

Scale
  • 2 lbs sweet potatoes, peeled and diced into 1-inch cubes
  • 1/4 cup honey
  • 1 teaspoon ground cinnamon
  • 2 tablespoons olive oil (or melted coconut oil)
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla powder

Instructions

  1. Step 1: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup. Peel the sweet potatoes and cut them into uniform 1-inch cubes.
  2. Step 2: In a large bowl, toss the diced sweet potatoes with the olive oil and salt until evenly coated. Spread them in a single layer on the prepared baking sheet and roast for 15 minutes.
  3. Step 3: While the sweet potatoes are roasting, whisk together the honey, ground cinnamon, and vanilla bean paste in a small bowl until well combined.
  4. Step 4: After 15 minutes, remove the baking sheet from the oven. Drizzle the honey-cinnamon mixture over the partially roasted sweet potatoes and toss gently to ensure all pieces are coated.
  5. Step 5: Return the sweet potatoes to the oven and continue roasting for another 15-20 minutes, or until they are tender, slightly caramelized, and have a beautiful golden glaze. Serve warm.

Notes

  • Store any leftover bites in an airtight container in the refrigerator for up to 3-4 days; they make a fantastic quick snack!
  • To revive their tender texture, gently reheat the sweet potato bites in a 300°F (150°C) oven for about 10 minutes, or briefly microwave them, being careful not to overcook.
  • These sweet and savory bites are a perfect complement to roasted chicken, chicken breast, holiday feasts, or even as a unique addition to a hearty breakfast hash.
  • For that ideal caramelized glaze and even cooking, always ensure your sweet potato cubes are truly uniform in size and avoid overcrowding the baking sheet, allowing them to roast beautifully.
