Instructions
- Step 1: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup. Peel the sweet potatoes and cut them into uniform 1-inch cubes.
- Step 2: In a large bowl, toss the diced sweet potatoes with the olive oil and salt until evenly coated. Spread them in a single layer on the prepared baking sheet and roast for 15 minutes.
- Step 3: While the sweet potatoes are roasting, whisk together the honey, ground cinnamon, and vanilla bean paste in a small bowl until well combined.
- Step 4: After 15 minutes, remove the baking sheet from the oven. Drizzle the honey-cinnamon mixture over the partially roasted sweet potatoes and toss gently to ensure all pieces are coated.
- Step 5: Return the sweet potatoes to the oven and continue roasting for another 15-20 minutes, or until they are tender, slightly caramelized, and have a beautiful golden glaze. Serve warm.
