Description

Indulge in a healthier twist! This Cottage Cheese Chicken Parm Bowl layers tender chicken, zesty marinara, and melted cheeses over a creamy cottage cheese base. Quick to assemble.

Ingredients

  • Cooked chicken breast: 1 cup, shredded or diced
  • Cottage cheese: 1 cup
  • Marinara sauce: 1/2 cup
  • Shredded mozzarella cheese: 1/4 cup
  • Grated Parmesan cheese: 2 tablespoons
  • Italian seasoning: 1/2 teaspoon
  • Fresh basil: 1 tablespoon, chopped
  • Salt and black pepper: to taste

Instructions

  1. Step 1: If your chicken is not already cooked, cook 1 boneless, skinless chicken breast (about 4-6 oz) until done, then shred or dice it into bite-sized pieces. Season the chicken lightly with salt and pepper.
  2. Step 2: In an oven-safe bowl, spoon the cottage cheese into the bottom to create an even base layer.
  3. Step 3: Evenly spread the shredded or diced chicken over the cottage cheese. Pour the marinara sauce over the chicken, ensuring good coverage.
  4. Step 4: Sprinkle the shredded mozzarella cheese and grated Parmesan cheese over the marinara sauce. Dust with Italian seasoning and add additional salt and black pepper to taste.
  5. Step 5: Bake in a preheated oven at 375°F (190°C) for 10-15 minutes, or until the cheese is melted and bubbly and the bowl is heated through. Alternatively, microwave on high for 1-2 minutes until heated through and cheese is melted.
  6. Step 6: Carefully remove the bowl from the oven or microwave. Garnish with fresh chopped basil before serving immediately.

Notes

  • Keep any delicious leftovers in an airtight container in the fridge for up to 3-4 days; it makes for a fantastic quick lunch!
  • For best results and to keep the cheese bubbly, gently reheat your bowl in the oven at 300°F (150°C) until warm, or use short bursts in the microwave, stirring occasionally to prevent the cottage cheese from separating.
  • Elevate your bowl by serving it alongside a crisp green salad with a light vinaigrette or some warm, crusty bread to scoop up every last bit of that savory sauce.
  • If you're not a fan of cottage cheese's texture, a quick blend with an immersion blender before layering will make it super smooth without sacrificing flavor.
