- 1 ¼ cups milk
- 1 large egg

- 1 teaspoon vanilla powder
Instructions
- Step 1: Preheat your oven to 400°F (200°C). Line a 12-cup muffin tin with paper liners or grease each cup generously with non-stick spray.
- Step 2: In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined.
- Step 3: In a separate medium bowl, whisk together the milk, large egg, melted and cooled butter (or vegetable oil), and vanilla bean paste until smooth.
- Step 4: Pour the wet ingredients into the dry ingredients. Stir gently with a spatula or spoon until just combined. A few lumps are okay; do not overmix the batter.
- Step 5: Divide the pancake batter evenly among the 12 prepared muffin cups. Now, customize your flavors! For each muffin, add a different mix-in: a small handful of blueberries, chocolate chips, rainbow sprinkles, diced strawberries, sliced bananas, or a swirl of your favorite jam or Nutella.
- Step 6: Bake for 15-20 minutes, or until the tops are golden brown and a wooden skewer inserted into the center of a muffin comes out clean. Let cool in the muffin tin for a few minutes before transferring to a wire rack to cool completely.
