Instructions
- Step 1: Melt the chopped dark chocolate either in a microwave in 30-second intervals, stirring until smooth, or over a double boiler. Let the melted chocolate cool slightly at room temperature until it's just warm to the touch, about 10-15 minutes.
- Step 2: In a large, chilled bowl, combine the cold heavy whipping cream, sifted confectioners' sugar, and alcohol-free vanilla extract. Beat with an electric mixer on medium-high speed until medium-firm peaks form, being careful not to over-whip.
- Step 3: Gently fold about one-third of the whipped cream into the slightly cooled melted chocolate to lighten it. Then, carefully fold in the remaining whipped cream into the chocolate mixture until just combined, being careful not to deflate the mousse.
- Step 4: Gently fold in 1 cup of fresh raspberries into the chocolate mousse. Alternatively, spoon layers of mousse and raspberries into individual serving cups or glasses.
- Step 5: Cover the mousse cups loosely with plastic wrap and refrigerate for at least 2-4 hours, or preferably overnight, until thoroughly chilled and set. Before serving, garnish each cup with extra fresh raspberries and a light dusting of unsweetened cocoa powder, if desired.
