- 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
- 8 oz rotini pasta
- 2 tablespoons Cajun seasoning, divided
- 1 tablespoon olive oil
- 1 small onion, diced
- 1 red bell pepper, diced
- 3 cups chicken broth
- 1/2 cup heavy cream
- 1 cup shredded Colby Jack cheese
Instructions
- Step 1: In a large skillet, heat olive oil over medium-high heat. Add the chicken pieces seasoned with 1 tablespoon of Cajun seasoning and cook until browned on all sides, about 5-7 minutes. Remove the chicken from the skillet and set aside.
- Step 2: To the same skillet, add the diced onion and red bell pepper. Sauté for 3-5 minutes until softened. Stir in the remaining 1 tablespoon of Cajun seasoning.
- Step 3: Pour in the chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet. Add the rotini pasta and the cooked chicken back into the skillet. Stir well, then cover and cook for 10-12 minutes, or until the pasta is al dente, stirring occasionally.
- Step 4: Uncover the skillet. Stir in the heavy cream and then gradually add the shredded Colby Jack cheese, stirring continuously until the cheese is fully melted and the sauce is creamy and thickened.
- Step 5: Remove from heat and let the skillet sit for 2-3 minutes to allow the sauce to set slightly. Serve immediately and enjoy your spicy, quick, and delicious dinner!
