Ingredients
- Good quality Milk Chocolate: 300g
- Good quality Dark Chocolate: 200g
- Smooth Pistachio Butter: 150g
- Fresh or frozen Kadayif (shredded phyllo dough): 100g
- Unsalted Butter: 50g
- Roasted Shelled Pistachios: 75g
- Powdered Sugar: 2 tablespoons (optional, to taste)
- Sea Salt: 1/4 teaspoon
Instructions
- Step 1: Prepare the Kadayif Crunch. Melt 25g of unsalted butter in a pan over medium heat. Add the shredded kadayif and cook, stirring constantly, until golden brown and crispy, about 5-7 minutes. Once crispy, remove from heat and let it cool completely. Roughly chop the roasted pistachios.
- Step 2: Create the Rich Pistachio Filling. In a medium bowl, combine the pistachio butter, the remaining 25g of unsalted butter (melted), powdered sugar (if using), and sea salt. Mix well until smooth and thoroughly combined. Gently fold in the cooled, crispy kadayif and the chopped roasted pistachios until evenly distributed. The mixture should be thick and spreadable.
- Step 3: Prepare the Chocolate Shells. Roughly chop both milk and dark chocolates. Melt 400g of the mixed chocolate using a double boiler or in a microwave (heating in 30-second intervals, stirring well after each) until smooth and glossy. Using a pastry brush or spoon, coat the inside of your chocolate bar molds with a thin, even layer of melted chocolate. Place the molds in the refrigerator for 5-10 minutes to set the chocolate.
- Step 4: Fill the Chocolate Bars. Remove the chilled molds from the refrigerator. Spoon the prepared pistachio and kadayif filling evenly into each chocolate shell, gently pressing it down to create an even layer. Ensure you leave a small gap at the top of the mold for the final chocolate layer.
- Step 5: Seal and Set the Bars. Re-melt any remaining chocolate if it has cooled and become too thick. Pour the remaining melted chocolate over the filling in each mold, spreading it gently to completely cover the filling and seal the base of the bar. Tap the molds lightly on the counter several times to release any air bubbles and ensure a smooth, even finish.
- Step 6: Chill and Serve. Place the filled chocolate molds back into the refrigerator for at least 30-60 minutes, or until the chocolate is completely firm and easily releases from the mold.
