Instructions

  1. Step 1: In a large skillet over medium-high heat, cook the ground beef and diced onion until the beef is browned and the onion is softened. Drain any excess fat, then stir in the ketchup, mustard, and salt. Remove from heat and let the mixture cool slightly.
  2. Step 2: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper. Unroll the thawed puff pastry sheets and cut each sheet into four equal rectangles, for a total of eight rectangles.
  3. Step 3: Place a spoonful of the beef mixture onto one half of each puff pastry rectangle, leaving a small border. Sprinkle a portion of the shredded cheddar cheese over the beef mixture. Fold the other half of the pastry over the filling to create a pocket.
  4. Step 4: Use a fork to firmly crimp the edges of each pocket to seal them completely. In a small bowl, whisk the egg with 1 tablespoon of water to create an egg wash. Brush the top of each hot pocket with the egg wash and make 2-3 small slits on top of each pocket to allow steam to escape.
