Description

Spice up dinner with Buffalo Chicken Lasagna! Layers of tender buffalo chicken, creamy ricotta, and gooey mozzarella make this a speedy, cheesy weeknight delight.

Ingredients

Scale
  • 3 cups cooked, shredded chicken (from rotisserie chicken or pre-cooked breasts)
  • 9 oven-ready lasagna noodles
  • 15 oz (1 container) ricotta cheese
  • 3 cups shredded mozzarella cheese, divided
  • 3/4 cup buffalo wing sauce (e.g., Frank's RedHot Buffalo Wing Sauce)
  • 1/2 cup ranch dressing
  • 1 large egg
  • 3 green onions, chopped

Instructions

  1. Step 1: Preheat oven to 375°F (190°C). In a medium bowl, combine ricotta cheese, 1 cup of the shredded mozzarella, ranch dressing, egg, and half of the chopped green onions. Mix well until everything is evenly combined.
  2. Step 2: In a separate bowl, toss the cooked, shredded chicken with the buffalo wing sauce until the chicken is thoroughly coated.
  3. Step 3: Spread a thin layer of the ricotta mixture on the bottom of a 9×13 inch baking dish. Lay 3 lasagna noodles over the mixture. Spread half of the remaining ricotta mixture over the noodles, then top with half of the buffalo chicken and 1 cup of the remaining shredded mozzarella cheese.
  4. Step 4: Repeat the layering: 3 lasagna noodles, the rest of the ricotta mixture, the rest of the buffalo chicken, and 1 cup of shredded mozzarella. Top with the final 3 lasagna noodles and the remaining 1 cup of shredded mozzarella cheese.
  5. Step 5: Cover the baking dish tightly with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the cheese is melted, bubbly, and lightly golden brown.
  6. Step 6: Let the lasagna rest for 10-15 minutes before slicing and serving. Garnish with the remaining chopped green onions.

Notes

  • Leftover lasagna keeps beautifully in an airtight container in the fridge for up to 3-4 days, making weeknight meals a breeze.
  • For best results, reheat individual slices in the microwave until warm, or cover a larger portion with foil and warm in a 350°F (175°C) oven until heated through, about 20-30 minutes.
  • This hearty lasagna pairs perfectly with a crisp, cool side salad or some refreshing celery and carrot sticks with extra ranch or blue cheese dressing to balance the spice.
  • To customize the heat, feel free to add a little extra buffalo sauce if you like it really hot, or for a milder take, you can stir in an additional tablespoon of ranch dressing with the chicken mixture.
