- 8 small flour tortillas (6-inch)
- 8 ounces cream cheese, softened
- 1/2 cup powdered sugar
- 1/2 cup heavy cream, cold
- 1 teaspoon alcohol-free vanilla extract
- 1 cup fresh mixed berries (strawberries, blueberries, raspberries)
- 2 tablespoons unsalted butter, melted
- 3 tablespoons cinnamon sugar
Instructions
- Step 1: Preheat oven to 375°F (190°C). Lightly brush both sides of each flour tortilla with melted butter, then sprinkle generously with cinnamon sugar. Drape each tortilla over two bars of an oven rack to create a taco shape, or place in a taco holder.
- Step 2: Bake the tortillas for 8-12 minutes, or until golden brown and crispy. Keep a close eye on them to prevent burning. Remove from oven and let cool completely on a wire rack to maintain their crispiness.
- Step 3: While the shells cool, prepare the cheesecake filling. In a medium bowl, beat the softened cream cheese, powdered sugar, and vanilla bean paste with an electric mixer until smooth and creamy. In a separate cold bowl, whip the cold heavy cream until soft peaks form. Gently fold the whipped cream into the cream cheese mixture until just combined.
- Step 4: Wash and gently pat dry the fresh mixed berries. If using large strawberries, slice them into smaller pieces.
- Step 5: Once the cinnamon-sugar taco shells are completely cool, spoon or pipe the cheesecake filling into each shell. Arrange the fresh mixed berries on top of the filling. Serve immediately or chill briefly for a cooler treat.

- Keep any leftover assembled cheesecake tacos in an airtight container in the fridge for up to 1 day; while the shells may soften slightly, they'll still be a delightful treat.
