Description
Savor ultimate keto comfort! Brown turkey and onion in rich turkey beef bacon fat, then bake into a cheesy casserole with cauliflower rice. Quick, satisfying dinner.
Ingredients
Scale
- 1 pound ground turkey
- 6 slices turkey bacon, chopped
- 1 medium onion, chopped
- 2 cups shredded sharp cheddar cheese, divided
- 1 (12 ounce) bag frozen cauliflower rice
- 1/4 cup heavy cream
- 1 teaspoon garlic powder
Instructions
- Step 1: Preheat oven to 375°F (190°C). Cook chopped turkey bacon in a large skillet over medium heat until crispy. Remove turkey bacon with a slotted spoon and set aside, reserving 1 tablespoon of turkey bacon fat in the skillet.
- Step 2: Add ground turkey and chopped onion to the skillet with the reserved turkey bacon fat. Cook, breaking up the turkey with a spoon, until browned and the onion is softened, about 8-10 minutes. Drain any excess grease. Stir in the garlic powder, along with salt and black pepper to taste.
- Step 3: Add the frozen cauliflower rice and heavy cream to the skillet with the turkey mixture. Cook for 3-5 minutes, stirring occasionally, until the cauliflower rice is slightly softened. Stir in 1 cup of the shredded cheddar cheese until just melted and combined.
- Step 4: Pour the turkey and cauliflower mixture into a 9×13 inch baking dish, spreading it evenly. Top with the remaining 1 cup of shredded cheddar cheese and sprinkle the cooked, crispy beef bacon over the top.
- Step 5: Bake for 20-25 minutes, or until the casserole is bubbly around the edges and the cheese on top is melted and lightly golden. Let stand for a few minutes before serving.
Notes
- Leftovers store beautifully in an airtight container in the fridge for 3-4 days, perfect for easy grab-and-go keto lunches.
- To revive your delicious casserole, gently reheat individual servings in the microwave, or for a crispier top, warm it covered in a 300°F oven until bubbly.
- For an extra burst of flavor and freshness, serve this comforting casserole with some chopped dill pickles, a sprinkle of fresh chives, or a side of crisp green salad.
- To truly maximize that savory cheeseburger flavor, ensure your ground turkey is well-browned and don't discard that precious turkey beef bacon fat—it's your secret weapon for a richer taste in the casserole base.
