Instructions
- Step 1: Line a baking sheet with parchment paper and set aside. In a medium bowl, combine the Greek yogurt, finely chopped strawberries, maple syrup (if using), alcohol-free vanilla extract, and a pinch of sea salt. Mix well until all ingredients are evenly distributed.
- Step 2: Drop spoonfuls of the strawberry yogurt mixture onto the prepared baking sheet, forming clusters of desired size (about 1.5-2 inches wide). Leave a small space between each cluster.
- Step 3: Place the baking sheet in the freezer for at least 1-2 hours, or until the yogurt clusters are completely firm and frozen solid.
- Step 4: Once the yogurt clusters are frozen, melt the chocolate chips. In a microwave-safe bowl, combine the chocolate chips and coconut oil (if using). Microwave in 30-second intervals, stirring well after each, until the chocolate is smooth and fully melted. Alternatively, use a double boiler.
- Step 5: Remove the frozen yogurt clusters from the freezer. Dip each cluster halfway into the melted chocolate, or drizzle the chocolate generously over the clusters using a spoon or a piping bag.
- Step 6: Immediately return the chocolate-coated clusters to the freezer for another 15-30 minutes, or until the chocolate coating is completely set and firm. Store the clusters in an airtight container in the freezer for a healthy, high-protein frozen treat.
