Remove potatoes from the skillet and set aside.
- Step 3: Sear the steak. Increase heat to high. Add seasoned steak bites to the hot skillet in a single layer (cook in batches if necessary to avoid overcrowding). Sear for 2-3 minutes per side until browned, then remove steak from the skillet and set aside with the potatoes.
- Step 4: Make the garlic butter. Reduce heat to medium. Add butter to the skillet and let it melt. Add minced garlic and sauté for 30-60 seconds until fragrant, being careful not to burn it.
- Step 5: Combine and serve. Return the cooked steak bites and potatoes to the skillet. Toss everything gently to coat with the garlic butter. Cook for another 1-2 minutes to heat through. Garnish with fresh chopped parsley before serving immediately.
