Instructions

  1. Step 1: Bring a large pot of salted water to a boil. Add the 8 oz spaghetti and cook according to package directions until al dente, usually 8-10 minutes. Before draining, reserve 1 cup of the pasta cooking water. Drain the pasta and set aside.
  2. Step 2: While the pasta cooks, heat 1 tablespoon olive oil in a large skillet or Dutch oven over medium-high heat. Add the 1 lb ground beef and cook, breaking it up with a spoon, until browned and no longer pink, about 5-7 minutes. Drain any excess grease.
  3. Step 3: Reduce heat to medium. Add the 4 tablespoons unsalted butter and 6 cloves minced garlic to the skillet with the beef. Cook for 1-2 minutes, stirring frequently, until the garlic is fragrant but not browned.
  4. Step 4: Stir in the 1/2 cup beef broth and bring to a simmer. Add the cooked and drained spaghetti to the skillet, tossing to combine with the beef and garlic butter sauce. Stir in the 1/4 cup grated Parmesan cheese and the 2 tablespoons chopped fresh parsley.
  5. Step 5: If the sauce seems too thick, add a little of the reserved pasta cooking water, one tablespoon at a time, until it reaches your desired consistency. Season generously with salt and freshly ground black pepper to taste. Serve immediately, garnished with additional Parmesan cheese if desired.
