Instructions

  2. Step 2: In a large bowl, whisk together the olive oil, the juice from half of the lemon, minced garlic, dried Italian seasoning, 1 teaspoon salt, and 1/2 teaspoon black pepper.
  3. Step 3: Add the chicken thighs, quartered potatoes, and chopped carrots to the bowl with the seasoning mixture. Toss everything until the chicken and vegetables are evenly coated.
  4. Step 4: Arrange the chicken and vegetables in a single layer on the prepared baking sheet. Place lemon slices randomly among the ingredients. Roast for 20 minutes.
  5. Step 5: After 20 minutes, remove the baking sheet from the oven. Add the broccoli florets to the pan, toss gently with some of the pan drippings, and return to the oven. Continue roasting for another 15-20 minutes, or until the chicken is cooked through (internal temperature 165°F/74°C) and the vegetables are tender and slightly caramelized.
