Description
Skip the oven! These ultra-fudgy No-Bake Brownie Bites use Medjool dates and oats for dense, satisfying sweetness. Just blend and roll—pure chocolate bliss, naturally fueled.
Ingredients
Scale
- 1 cup pitted Medjool dates
- 1/2 cup rolled oats
- 1/4 cup unsweetened cocoa powder
- 2 tablespoons creamy almond butter (or peanut butter)
- 1 teaspoon alcohol-free vanilla extract
- 1/4 teaspoon salt
- 1/4 cup mini chocolate chips (optional for rolling)
Instructions
- Step 1: Combine the dry ingredients (rolled oats and cocoa powder) in a food processor and pulse until the oats are finely ground and the mixture resembles a coarse powder.
- Step 2: Add the dates, almond butter, alcohol-free vanilla extract, and salt to the food processor. Process on high speed for 1-2 minutes until a sticky, uniform dough forms that pulls away from the sides of the bowl.
- Step 3: If the mixture seems too dry or crumbly, add 1/2 teaspoon of water or maple syrup and pulse again until the mixture binds together easily when squeezed.
- Step 4: Scoop the mixture using a small spoon (about 1 tablespoon per bite) and roll the dough into smooth, uniform balls. If using, place the mini chocolate chips in a shallow dish and roll each bite in the chips until coated.
- Step 5: Arrange the finished brownie bites on a plate or baking sheet lined with parchment paper. Refrigerate for at least 30 minutes to allow the bites to firm up before serving. Store leftovers in an airtight container in the refrigerator.
Notes
- For maximum freshness, layer the finished bites in an airtight container between small sheets of parchment paper and store them in the freezer for up to 3 months, enjoying them straight from frozen.
- Although they are served chilled, letting the bites rest at room temperature for about 10 minutes before eating allows the date base to warm slightly, delivering a much richer, fudgy texture.
- Elevate your presentation by serving these brownie bites dusted with a sprinkle of flaky sea salt or paired alongside a dollop of whipped cream for a sophisticated, simple dessert.
- If your Medjool dates feel firm, take the time to soak them in very hot water for five minutes and drain them completely before processing; this step guarantees a smooth, easily workable dough that won’t require extra liquids.
