Ingredients
- Boneless, skinless chicken breasts (1.5 lbs)
- Cornstarch (1/2 cup)
- Vegetable Oil (1/4 cup)
- Mayonnaise (1/2 cup)
- Thai Sweet Chili Sauce (1/4 cup)
- Sriracha (2 tablespoons)
- Honey (1 tablespoon)
- Scallions, sliced (2 tablespoons)
Instructions
- Step 1: Prepare the chicken by cutting the breasts into 1-inch cubes. Place the cubed chicken into a bowl, then toss thoroughly with the cornstarch, salt, and pepper until every piece is fully coated.
- Step 2: In a small separate bowl, prepare the Bang Bang Sauce by whisking together the mayonnaise, Thai sweet chili sauce, Sriracha, and honey until the mixture is smooth and uniform. Set the sauce aside.
- Step 3: Heat the vegetable oil in a large skillet over medium-high heat. Add the coated chicken pieces (working in batches if necessary to avoid crowding) and cook for 5-7 minutes, turning frequently, until the chicken is cooked through and the coating is golden brown and crispy.
- Step 4: Remove the skillet from the heat source. Pour the prepared Bang Bang Sauce over the cooked, crispy chicken and gently toss using tongs or a spatula until all the chicken pieces are evenly coated in the creamy sauce.
- Step 5: Assemble the bowls by dividing 4 servings of cooked white rice among individual bowls. Top the rice generously with the sauced Bang Bang Chicken and garnish the dish with the sliced scallions before serving immediately.

- To maintain the chicken’s coating, store the sauced chicken separately from the rice; leftovers are best enjoyed within three days.
- Avoid using the microwave to reheat; instead, gently warm the sauced chicken in a 350°F air fryer or conventional oven for 5 minutes to help preserve the texture.
