Instructions

  1. Step 1: In a medium bowl, combine the shredded cooked chicken, rinsed black beans, thawed corn, Greek yogurt (or mayonnaise), and Southwest seasoning blend. Stir thoroughly until the chicken is evenly coated and the ingredients are well mixed.
  2. Step 2: Taste the chicken mixture and adjust seasoning if necessary. For best flavor, cover the bowl and chill the filling in the refrigerator for at least 15 minutes, allowing the flavors to meld.
  3. Step 3: Slightly warm the whole wheat tortillas in a dry skillet over medium heat for 10-15 seconds per side, or microwave briefly. This makes them more pliable and easier to roll without tearing.
