Instructions

  1. Step 1: Preheat the oven to 350°F (175°C). Grease and flour a standard 9×5 inch loaf pan, or line it with parchment paper for easy removal.
  2. Step 2: In a large bowl, whisk together the sourdough discard, granulated sugar, melted butter, and eggs until the mixture is smooth and well combined.
  3. Step 3: In a separate medium bowl, whisk together the flour, baking powder, 1 teaspoon of the ground cinnamon, and salt. Gradually add the dry ingredients to the wet ingredients, mixing only until just combined; be careful not to overmix the batter.
  4. Step 4: (Optional Swirl): Prepare a cinnamon swirl mixture by combining 2 tablespoons of sugar with 1/2 teaspoon of cinnamon.
